Microsoft has previously mentioned in its blog that it will no longer force Windows 11 users to install updates, because automatically downloading and installing updates does in fact cause trouble to many users. Although timely installation of updates can improve system security, the premise is that it does not affect the normal use of users.
Therefore, Microsoft will continue to use automatic updates by default in the future, but if users need to, they can pause updates and still pause updates indefinitely. Now these changes have brought this feature in Windows 11 Build 26300.8289 (experimental version), and users can see the date selection window when the experimental option is enabled.

Pause for up to 5 weeks at a time but updates can be paused an unlimited number of times:
Although users in the current official version of Windows 11 can also pause updates, the system will recheck for updates after a pause of up to 4 weeks and it is mandatory. Updates can only be paused again after the system completes installing updates. Therefore, ordinary users need to install updates every month. Of course, these updates may also cause various problems to the system.
The new option provided by Microsoft is a date picker. Users can choose to go back up to 35 days. After selecting the time, the system will pause updates. Unlike the previous mandatory check for updates due to expiration, users can continue to delay updates within the 35-day pause period, and ultimately achieve the purpose of pausing updates indefinitely. They only need to manually update the pause date for up to 35 days.
This method allows professional users to choose the update time according to their own plans or preferences. For example: I observed that the recently released update may cause system abnormalities, so I directly set the update after 35 days to avoid this problem patch. If there are still problems with the next month's update, continue to postpone it.

How to enable the defer updates option:
The prerequisite is that the system version requires Windows 11 Build 26300.8289 or higher. This feature is not currently supported below this version. This feature is still under testing, so users need to manually enable the feature in the experimental options and then restart the system to make it take effect.
Option path: Windows 11, Settings, Updates, Preview Plan, Advanced Options, Experimental Flag, Enable "Pause Updates on Schedule". After enabling this option, you will be prompted to restart the system. After restarting the system, go to Updates and click Pause Updates to see the date option function.
